The brewing of TenryohaiThe traditional skill and art of sake brewing have been handed down through the brewers' long experience and sixth sense. At Tenryohai Brewery, by introducing the state-of-the-art facilities, the brewers succeeded in digitizing their experience and sensitive sixth sense concretely, and producing high-quality stable sake. Needless to say, they judge things themselves that only humans can judge, such as the ever-changing scent and feel of the malt, and then they give directions to the machines through the computers. They always aim to produce high-quality sake that people refer to as tasty under the hygienic circumstances, keeping in mind that it is not human hands nor the machines, but "bacteria" (yeast plants or yeast fungi) that brew sake.

Carefully selected water

Carefully selected waterThe water used to make Tenryohai is the subsoil water from "Mt. Kinpoku," the highest and most noted mountain on Sado Island which is located close to the center of the Osado Mountain Range. The meltwater that has flowed out through forty years is ideal for making sake, and the rice wine that has been brewed has a soft and refreshing flavor and is highly fragrant. In addition, this subsoil water goes exceptionally well with the rice best fit for making sake (the Koshitanrei brand of rice) that is produced on Sado.

"Sado Mahoroba-junmai," sake made 100% from the Koshihikari brand of rice grown without using any pesticide at allThis is the sake brewed with a wish for beautiful nature in which toki (Japanese crested ibises) fly around in the sky over Sado Island where the internationally protected birds were last seen hovering. This rice wine is made solely from the Koshihikari brand of rice cultivated without using any pesitcide by employing the EM (Effective Microorganisms) natural farming methods (the organic farming methods without the use of any chemical fertilizer or pesticide).
By using Koshihikari as material rice, the sake has a sourer flavor than ordinary sake made without added alcholol or sugar, and tastes fruity like wine.

Popular products
"Kuramoto-no-amazake" is a non-alcoholic sweet drink which the brewers have made from nothing but rice-malt and water. Since sugar is not used, you can enjoy the natural sweetness that comes from the ingredients.
One of the recommended ways of drinking is blending "Kuradashi-namachozoshu Super Bottle" and "Kuramoto-no-amazake" in a ratio of one to one. You can enjoy a taste like doburoku (unrefined sake).
